Apple-Cheese Pancakes

Amount Measure Ingredient — Preparation Method

1 cup cottage or ricotta cheese
1 cup grated apple — heaping, packed
(any kind but delicious)
3/4 cup flour
(you can use 1/2 cup white and 1/4 cup whole wheat)
1 tablespoon honey
1 teaspoon fresh lemon juice
1 tablespoon sunflower seeds or chopped almonds
1/2 teaspoon cinnamon
1 dash nutmeg or allspice
4 eggs — separated
1/2 teaspoon salt
OPTIONAL FOR SERVING (mix and match):
2 tablespoons maple syrup
sour cream or yogurt
fresh fruit
cinnamon sugar

Mix everything together except eggwhites.

Beat these until stiff and fold into batter.

Fry pancakes in butter on both sides until brown.
